Lemon

Meringue: light, sweet, and absolutely delicious. Best of all, your hens’ fresh eggs can be whipped up into this culinary wonder. Impress your family and friends with this lemon meringue pie recipe.

You’ll need:

  • 1 pie plate
  • Hand mixer or stand mixer with whisk attachment
  • Food scale

Ingredients

For the filling:

  • 1 cup white sugar
  • 2 tablespoons all-purpose flour
  • 3 tablespoons cornstarch
  • ¼ teaspoon salt
  • 1 ½ cups water
  • 2 lemons, juiced and zested
  • 2 tablespoons butter
  • 4 fresh egg yolks, beaten
  • 1 (9in) pie crust, baked

For the meringue:

  • 4 egg whites
  • ½ cup white sugar

Directions

1. Preheat oven to 325 degrees F.

2. Prepare the filling:

a. Whisk 1 cup sugar, flour, cornstarch, and salt together in a medium saucepan; stir in water, lemon juice, and lemon zest.

b. Cook over medium-high heat, stirring frequently, until mixture comes to a boil. Stir in butter.

3. Place egg yolks in a small bowl and gradually whisk in ½ cup of the hot sugar mixture from step 2. Bring to a boil and continue to cook and stir constantly until thickened. Remove from heat; pour filling into baked pastry shell.

4. To make the meringue:

a. Beat egg whites in a glass, metal, or ceramic bowl with an electric mixer until foamy.

b. Gradually add sugar, continuing to beat until stiff peaks form.

c. Spread meringue over pie filling, sealing the edges at the crust.

5. Bake in a preheated oven until the meringue is golden brown, about 20-25 minutes.
